# Flavours and fragrances: Overview

From cola to detergent: where flavours and scents end up

What this tab covers What the chemical is, how big its market is, what it is used for (with shares, volumes, why it wins and what could replace it), and its chain from raw material to end user. Ends with three things to remember.

Flavour and fragrance (F&F) houses design and sell blends of aroma molecules and natural extracts that make food taste and products smell a certain way. Ingredients come from petrochemicals and turpentine (synthetic aroma chemicals), from crops (mint, citrus, vanilla, spices) and increasingly from fermentation. IAL Consultants put the market at $43.07 billion in 2025, 54% flavours and 46% fragrances, growing about 4.9% a year to 2030. Four companies hold about 55-60% of revenue (IMARC). India matters as a supplier of mint, spice oleoresins and aroma chemicals, and as a fast-growing market.
Volume not published as a world tonnage; compounds are dosed at low levels (often under 1% of a food or 1-3% of a detergent, indicative) Market value $43.07 billion (2025, IAL Consultants): flavours $23.41 billion, fragrances $19.66 billion; IMARC gives $34.32 billion on a narrower definition Growth 4.9% a year 2025-2030 to $54.67 billion (IAL); Asia 6.7% a year, Western Europe 3.0% IAL Consultants 16th edition via Perfumer & Flavorist (2026); IMARC Flavors and Fragrances Market 2026-2034

#### Key uses

| Use | Share | Annual volume | Why this commodity | Alternatives |
|---|---|---|---|---|
| **Flavours for beverages, savoury and snacks, dairy, bakery and confectionery** | 54% | $23.41 billionbasis | Processed food and drinks need consistent taste across batches and countries, and reformulation to cut sugar, salt and fat needs flavour masking and enhancement. Beverages are the largest flavour application (IMARC). IAL via Perfumer & Flavorist 2026; IMARC 2025 | Whole ingredients (fruit, spices, herbs) In-house flavour creation by large food companies |
| **Fragrance for soaps and detergents** | 15% | about $6.4 billionbasis | Laundry powders, liquids and bar soaps are the largest fragrance volume; consumers choose detergents partly by scent. Cost per kg is low and aroma chemicals dominate. IMARC 2025; IAL 2025 | Unscented products |
| **Fragrance for cosmetics and toiletries** | 12.3% | about $5.3 billionbasis | Shampoos, deodorants, lotions and oral care; menthol and mint flavours bridge flavour and fragrance in toothpaste. IMARC 2025; IAL 2025 | Unscented and natural ranges |
| **Fine fragrance (perfumes)** | 9.4% | about $4.0 billionbasis | The highest value per kg and the fastest growth recently: Givaudan's fine fragrance sales rose 18.3% like-for-like in 2025. IMARC 2025; Givaudan 2025 results | none at scale |
| **Household cleaners and air fresheners** | 6.3% | about $2.7 billionbasis | Surface cleaners, dishwashing liquids, candles and air care. IMARC 2025; IAL 2025 | Unscented products |
| **Other fragrance uses** | 3% | about $1.3 billionbasis | Pet care, industrial masking, textiles. derived | none practical |

Flavour and fragrance totals are from IAL (2025). Splits within fragrances use IMARC's 2025 application shares applied to IAL's fragrance total; shares of the whole market are derived (e.g. 46% x 32.5% = 15.0%). No public split within flavours was found.

#### From raw material to user

1. **Crops and feedstocks** Mint, citrus peel, vanilla, spices, flowers; turpentine from pine pulping; petrochemicals such as benzene, toluene and phenol. India exported 19,636 t of mint products and 16,882 t of spice oils and oleoresins in Apr-Jan 2025-26 (Spices Board via spices tile).
2. **Ingredients** Essential oils are distilled or pressed; aroma chemicals such as vanillin, menthol, linalool, citral and musks are synthesised or fermented. Fragrance synthetics are 62.4% of fragrance ingredients by value (IMARC 2025).
