# Poultry: Characteristics

Why breasts stay in the West and paws go east

What this tab covers The supply and physical characteristics of the commodity. Supply: current production, inventories and stocks, capacity utilisation, geographic and producer concentration, how fast supply responds to price, the project pipeline and capital spending, and logistics and export flows. Material: the physical and chemical properties that set its grade, price and end uses (for example purity and conductivity for metals, API gravity, sulfur and energy content for fuels, moisture, protein and fibre quality for crops).

#### Supply volume characteristics

| Characteristic | Figure | What it means | Source |
|---|---|---|---|
| **Current production volume** | 128.3 Mt of chicken meat (2024); 112.4 Mt in USDA-covered countries (2026f) | Chicken is the fastest-growing meat: output rose from 35.4 Mt in 1990. About 78.5 billion chickens were slaughtered worldwide in 2024. | FAOSTAT 2024; USDA PSD, Oct 2026 |
| **Inventory and stock levels** | about 0.7% of a year's use: world ending stocks 0.76 Mt against 109.0 Mt consumption (2026f) | US broiler cold-storage stocks are forecast at 765 million lb at end-2026, under 2% of annual use. No major country holds a public chicken reserve. The buffer is the breeder flock and hatchery capacity. | USDA PSD and WASDE, Oct 2026 |
| **Capacity utilisation** | not published | Integrators do not publish plant utilisation. Supply adjusts by changing the number of eggs set in hatcheries each week, so plants run close to their line capacity and output is cut by placing fewer chicks. US broiler output reached 47.5 billion lb in 2025. | USDA WASDE, Oct 2026 |
| **Geographic and producer concentration** | US 15.7%, top-3 (US, China, Brazil) 38.4%, HHI 610; exports: Brazil 26.5% of value | Production is unconcentrated by country, but exports are led by Brazil, Poland and the US. In the US the four largest integrators (Tyson, Pilgrim's, Wayne-Sanderson, Perdue) produce over half of broilers (indicative). | FAOSTAT 2024; UN Comtrade 2024; USDA Packers and Stockyards Division annual report, 2022 (indicative) |
| **Supply elasticity** | high: about 2-3 months from egg set to meat | Eggs hatch after 21 days and broilers reach slaughter weight in about six weeks. Expanding the parent flock takes longer, about 6-9 months. This is why poultry recovers fastest from shocks. | industry practice (indicative); content_v2 poultry |
| **Project pipeline and CapEx** | demand-led growth; no aggregate CapEx figure | FAO projected chicken meat demand to grow 61% between 2005 and 2030 and total animal protein demand to rise 21% from 2020 to 2050. Brazil, China and India are adding integrated capacity. Venky's poultry segment earned Rs 1,928 crore in FY2025. | FAO 2013, Tackling climate change through livestock (GLEAM, ref. year 2005); FAO 2023, Pathways towards lower emissions (GLEAM 3, ref. year 2015); Venky's FY2025 results |
| **Logistics and export flows** | at least 11% of output exported: listed exporters shipped about 12.3 Mt of 112.4 Mt (2026f) | Latin America (5.70 Mt, mostly Brazil), the US (3.06 Mt), the EU (1.74 Mt) and China (1.54 Mt) lead. Frozen chicken moves in reefer containers to Japan, the Middle East, China, Mexico and Africa. Bottlenecks are avian influenza bans by region, halal certification for Gulf buyers and reefer container supply. | USDA PSD, Oct 2026; UN Comtrade 2024 |

#### Material characteristics Agricultural / soft commodity

Chicken is sold by grade, weight and cut. White breast meat and leg quarters go to different markets: Western buyers pay for breast, while leg quarters and paws are exported to Asia, Africa and Russia. Feed conversion and live weight set cost. Water versus air chilling, freezing and pathogen controls (Salmonella, Campylobacter) set shelf life and market access.

| Property | Value / specification | Why it matters | Source |
|---|---|---|---|
| **Grade** | USDA Grade A, B, C based on conformation, fleshing, fat and defects | Grade A is required for retail whole birds and parts | USDA AMS poultry grading |
| **Carcass weight** | average 2.11 kg in the US and Brazil, 1.50 kg in India, 1.31 kg in China (2024) | Heavier birds suit deboning plants; lighter birds suit live-bird markets in India | FAOSTAT 2024 |
| **Dressing yield** | about 70-75% of live weight | Sets meat output per bird and plant margins | industry practice (indicative) |
| **Feed conversion ratio** | about 1.6-1.8 kg feed per kg live weight for modern broilers | Feed is the main cost, so FCR decides competitiveness | industry practice (indicative) |
| **Protein content** | raw skinless breast about 22-23 g protein per 100 g | Lean protein drives demand in health-conscious markets | USDA FoodData Central (indicative) |
| **Pathogen and residue limits** | Salmonella performance standards (US, EU); halal slaughter for Gulf markets | Failing tests or certification closes export markets | USDA FSIS; EU Regulation 2073/2005 (indicative) |
