Protein, gluten and the tests that set a wheat's price What this tab covers The supply and physical characteristics of the commodity. Supply: current production, inventories and stocks, capacity utilisation, geographic and producer concentration, how fast supply responds to price, the project pipeline and capital spending, and logistics and export flows. Material: the physical and chemical properties that set its grade, price and end uses (for example purity and conductivity for metals, API gravity, sulfur and energy content for fuels, moisture, protein and fibre quality for crops).

#### Supply volume characteristics

| Characteristic | Figure | What it means | Source |
|---|---|---|---|
| **Current production volume** | about 844 Mt (2025/26 est.), a record; 822 Mt forecast for 2026/27 | China 17.6%, India 14.2%, Russia 10.3% of 2024 output (FAOSTAT). The EU made 145 Mt in 2025/26. | USDA WASDE (Oct 2026); USDA PSD; FAOSTAT 2024 |
| **Inventory and stock levels** | world ending stocks 282 Mt (2025/26), 34.2% of use, about 18 weeks | China holds 122 Mt, about 43%. India's central pool held 47.99 Mt on 1 September 2026 against a 1 October buffer norm of 20.52 Mt. | USDA WASDE (Oct 2026); FCI via Business Today (Oct 2026) (weeks derived) |
| **Capacity utilisation** | not applicable (land, not plants) | Yields show the gap: Egypt 6.78 t/ha and France 5.97 t/ha against India 3.56, Russia 3.06 and Australia 2.61 t/ha (2024). Flour mill utilisation is not published. | FAOSTAT 2024 |
| **Geographic and producer concentration** | China 17.6%, top-3 (China, India, Russia) 42.1%; HHI 777 (2024) | Unconcentrated production, but exports come from a few: Canada 17.7%, US 14.0%, Australia 13.1%, Ukraine 8.8% and France 8.7% of 2024 export value; Russia is the largest exporter by volume. China and India export little. | FAOSTAT 2024; Comtrade 2024 |
| **Supply elasticity** | annual, weather-dominated | Area responds to prices each sowing season, but drought in Russia, Australia or the US Plains can swing output 20-30%. India's MSP and procurement keep its area stable. | Content tile; FAOSTAT |
| **Project pipeline and CapEx** | growth from yields; no single projects | Output rose from 654 Mt in 2010 to 798 Mt in 2024 (FAOSTAT). Policy drives India's stocks: MSP Rs 2,585/quintal for RMS 2026-27 and Rs 2,610 for 2027-28. | FAOSTAT; Cabinet decisions; content tile |
| **Logistics and export flows** | about 227 Mt traded (2025/26), about 27% of output | Grain moves from Black Sea, US Gulf and Pacific, Canadian, Australian and French ports to Egypt, Indonesia, China, Algeria and the Philippines. Chokepoints are the Bosphorus, Suez and Black Sea security. | USDA WASDE (Oct 2026); Comtrade 2024 |

#### Material characteristics Agricultural / soft commodity

Wheat is valued by protein and gluten strength, which decide whether it makes bread, noodles, biscuits or pasta. Test weight indicates flour yield, falling number shows sprout damage, and moisture decides storage life. Each exporter grades its own classes; India's FCI buys to uniform specifications.

| Property | Value / specification | Why it matters | Source |
|---|---|---|---|
| **Protein** | hard red winter about 11-12%; hard red spring about 13-14%; Indian wheat about 10-12% (indicative) | Higher protein makes stronger bread dough and earns premiums | Industry norms (indicative) |
| **Test weight** | US No. 1 hard red wheat at least 60 lb/bu; No. 2 at least 58 lb/bu | Heavier grain gives more flour per tonne | USDA US Standards for Wheat |
| **Falling number** | about 250-300 seconds or more for bread milling (indicative) | Low values show sprout damage that ruins bread texture | ISO 3093 method; industry norms (indicative) |
| **Moisture** | FCI maximum 12% | Wet grain heats and spoils in storage | FCI uniform specifications (Rabi) |
| **Foreign matter and damage** | FCI: foreign matter at most 0.75%, damaged grains at most 2%, shrivelled and broken at most 6% (indicative) | Defines fair average quality for MSP procurement | FCI uniform specifications (indicative) |
| **Class and hardness** | hard, soft and durum classes | Durum for pasta, hard for bread and atta, soft for biscuits and cakes | USDA grading standards |
