Industrial enzymes: Overview

Bread, beer, detergent and fuel: where enzymes do the work

What this tab covers What the chemical is, how big its market is, what it is used for (with shares, volumes, why it wins and what could replace it), and its chain from raw material to end user. Ends with three things to remember.

Industrial enzymes are proteins that catalyse specific reactions at mild temperatures: amylases turn starch into sugar for ethanol and syrups, proteases remove stains in cold washes, phytase frees phosphorus in feed, and cellulases soften denim. They are grown by fermenting sugar with bacteria or fungi, then filtered and formulated. The market was about $8.0-8.4 billion in 2025 (Grand View via GII; MarketsandMarkets), with the top five holding over half. Novonesis, formed by merging Novozymes and Chr. Hansen, is the leader. India has one listed specialist, Advanced Enzyme Technologies.

Volume not published (sold by activity, not tonnes) Market value $8.0 billion (2025, Grand View Research via GII) to $8.42 billion (2025, MarketsandMarkets) Growth 5.6% a year to $12.43 billion in 2033 (Grand View) or 7.3% a year to $12.01 billion in 2030 (MarketsandMarkets) MarketsandMarkets Industrial Enzymes Research Insight (2026); Grand View Research via GII (2026)

Key uses

UseShareAnnual volumeWhy this commodityAlternatives
Food and beverages (baking, starch processing, brewing, dairy, juice)30%about $2.5 billionbasis Enzymes keep bread soft, convert starch to glucose and syrups, clarify juice and replace chemical steps; AB Enzymes' VERON GMS+ replaces monoglyceride emulsifiers in baking (MarketsandMarkets). MarketsandMarkets application list; share indicative Emulsifiers and chemical additives
Acid hydrolysis of starch
Household care (laundry and dishwasher detergents)22%about $1.8 billionbasis Proteases, amylases, lipases and mannanases remove stains at 20-30 C, so washing needs less heat and fewer surfactants. indicative More surfactant and hotter washes
Bioenergy (starch and cellulosic ethanol)18%about $1.5 billionbasis Alpha-amylase and glucoamylase are essential to grain ethanol; Novonesis reported double-digit growth in Energy in Q4 2025 (Novonesis). Novonesis Annual Report 2025; share indicative Acid hydrolysis (obsolete)
Animal feed (phytase, xylanase, protease)15%about $1.2 billionbasis Phytase releases phosphorus locked in grain, cutting mined phosphate additions; carbohydrases raise feed energy. indicative Mono- and dicalcium phosphate
Higher-energy diets
Technical and other (textiles, pulp and paper, leather, wastewater, agriculture, diagnostics)15%about $1.2 billionbasis Cellulases stonewash denim without pumice, xylanases cut bleach in pulp, and polymerases drive PCR diagnostics. MarketsandMarkets and Grand View segment lists; share indicative Chlorine bleaching
Pumice stones
MarketsandMarkets and Grand View list segments but publish no shares. Shares are indicative and applied to a midpoint of about $8.2 billion (2025).

From raw material to user

  1. Strain and protein engineering Producers engineer Bacillus, Aspergillus and Trichoderma strains for yield and stability; a new enzyme typically takes several years from discovery to sale (indicative).
  2. Fermentation Submerged fermentation in 100-300 m3 tanks on glucose, sucrose or starch with soy or corn steep nitrogen (indicative).
  3. Recovery Biomass removed by filtration or centrifugation; enzymes concentrated by ultrafiltration.
  4. Formulation Stabilised as liquids or coated granules; dosed at fractions of a kilogram per tonne of substrate (indicative).
  5. Use Customers pay per unit of activity; enzymes are a small cost line with large process savings.

Three things to know

  • The top five producers hold over half of the $8.4 billion market (MarketsandMarkets, 2025).
  • Novonesis grew 7% organically in 2025 with a 37.1% adjusted EBITDA margin (Novonesis Annual Report 2025).
  • Enzymes cut energy and chemicals in use: cold washing, phosphate-free feed and bleach-free pulp.
