Wheat was first farmed in the Fertile Crescent over 10,000 years ago. Today about three-quarters of US wheat is winter wheat, dormant under snow until spring.
Three things to know
- Wheat is the most evenly spread big grain, with an HHI of 777 in 2024 and China's 17.6% the largest share.
- Between June 2010 and February 2011, wheat prices more than doubled after Russia's drought and export ban.
- Protein and gluten strength decide whether a wheat becomes bread, noodles, biscuits or pasta.
