Cashew nuts: Extraction
The nut that grows outside its own fruit
What this tab covers How it is mined, drilled or grown, and processed into a tradeable form: the main methods compared, their unit economics, by-products, and the companies that do this work globally and in India. The cashew tree grows in hot, seasonally dry tropics, often on poor soils. Its kidney-shaped nut hangs below a fleshy cashew apple. Farmers gather fallen fruit, twist off the nuts and sun-dry them. The shell holds a caustic liquid, so kernels must be steamed or roasted, cracked and peeled, by hand or machine, before sale. This is slow work, and the kernel is only a minor part of the raw nut's weight. The shell liquid is a by-product used in resins and brake linings. Trees take a few years to bear, then produce for decades.
Cashew is a tropical tree crop grown mostly by smallholders in West and East Africa, India, Vietnam, Cambodia and Brazil. The tradeable form of the farm product is the dried raw cashew nut in its shell. The kernel sits inside a hard shell full of caustic oil, so processing is labour-intensive: steaming or roasting, shelling, drying, peeling and grading. India's processing industry in Kerala, Karnataka, Tamil Nadu and Goa relies on manual shelling and imported nuts. Vietnam has mechanised and became the largest exporter. Processors judge RCN by its outturn, the pounds of kernel per 80 kg bag.
Methods compared
| Method | Share of supply | Typical scale | Recovery / efficiency | By-products | Unit cost |
|---|---|---|---|---|---|
| Smallholder orchards in West and East Africa | Côte d'Ivoire 22.3%, Tanzania 12.5%, Ghana 5.2% and Benin 5.0% of world RCN output in 2024 (FAOSTAT) | Tanzania 0.53 Mt and Benin 0.21 Mt in 2024 (FAOSTAT) | Benin yield about 418 kg/ha (APEDA, Oct 2025) | cashew apple (mostly wasted) | n/a |
| Smallholder orchards in India and Vietnam | India 18.7% and Vietnam 7.2% of world RCN output in 2024 (FAOSTAT) | India 0.79 Mt from 1.20 Mha in 2024 (FAOSTAT); APEDA estimates 8.0 lakh t in 2024-25 | yield 663 kg/ha in India and 1,079 kg/ha in Vietnam (FAOSTAT 2024) | cashew apple for feni in Goa | n/a |
| Manual and semi-mechanised processing (India) | India imported 12.47 lakh t of RCN in CY2024, more than its own crop (APEDA) | India kernel output covers domestic demand of 4.6 lakh t and exports of about 0.4 lakh t (2024-25, APEDA) | indicative (basis: outturn convention): an outturn of 48 lb of kernel per 80 kg bag equals about 27% kernel by weight | CNSL, shells used as boiler fuel, testa (skin) | price reference only: India paid an average $1,349/t for imported RCN in CY2024 and received about $7,800/t for exported kernels in Oct 2025 (APEDA) |
| Mechanised processing (Vietnam) | about 64% of world kernel exports in 2025 (APEDA) | Vietnam imported 2.6 Mt of RCN worth $4.01 billion in January-October 2025 (average $1,523/t, up 21%) and exported about 7.4 lakh t of kernels in MY2025 (APEDA) | n/a | CNSL, shells | processing margins thin: export earnings nearly match the import bill (APEDA, Oct 2025) |
How each method works
Smallholder orchards in West and East AfricaFarmers harvest fallen nuts in the first half of the year, dry them and sell to buying agents at a government-set farmgate price in Côte d'Ivoire, or through warehouse-receipt auctions in Tanzania. Most nuts are exported raw.
Low-input cash crop for millions of farmers, but most value added is captured abroad and policy shifts (export levies, local-processing mandates) disrupt flows.
FAOSTAT 2024; APEDA Market Intelligence Cell, Oct 2025 Smallholder orchards in India and VietnamFarmers on the west and east coasts (Maharashtra, Andhra Pradesh, Odisha, Kerala, Karnataka, Goa) and in southern Vietnam sell RCN to local processors.
Feeds domestic processors, but ageing trees keep Indian yields low.
FAOSTAT 2024; APEDA, 2026 Manual and semi-mechanised processing (India)Nuts are steam-cooked, shelled by hand-and-foot cutters, dried in ovens (borma), peeled by hand and graded. Labour-intensive units employ mainly women workers in Kollam, Mangaluru, Panruti and Goa.
High whole-kernel yields and quality, but high labour cost and dependence on imported nuts.
APEDA Market Intelligence Cell dashboards, Oct 2025 and Mar 2026 Mechanised processing (Vietnam)Factories use automatic shelling and peeling machines and import most of their nuts from Africa and Cambodia.
Scale and low labour cost, but thin margins and heavy dependence on imported nuts.

India is the second-largest RCN grower (0.79 Mt in 2024, FAOSTAT) and a large importer of raw nuts (12.47 lakh t in CY2024), sourcing about 40-42% from Tanzania, Togo and Guinea-Bissau and about 12% from Côte d'Ivoire. It is now the largest kernel consumer, with exports down to about 0.4 lakh t a year (APEDA).
