Palm oil: Characteristics
Why a semi-solid oil is so useful to food makers
What this tab covers The supply and physical characteristics of the commodity. Supply: current production, inventories and stocks, capacity utilisation, geographic and producer concentration, how fast supply responds to price, the project pipeline and capital spending, and logistics and export flows. Material: the physical and chemical properties that set its grade, price and end uses (for example purity and conductivity for metals, API gravity, sulfur and energy content for fuels, moisture, protein and fibre quality for crops).Supply volume characteristics
| Characteristic | Figure | What it means | Source |
|---|---|---|---|
| Current production volume | about 79.6 Mt (FAOSTAT 2023); 78.9 Mt forecast for 2026/27 | The largest vegetable oil by volume. Indonesia (45 Mt) and Malaysia (19.6 Mt) grow over four-fifths. | FAOSTAT 2023; USDA PSD 2026/27 |
| Inventory and stock levels | world ending stocks 13.7 Mt forecast for 2026/27, 17.5% of use, about 64 days | Producer stocks are the market signal: Malaysia ended 2025 with 3.05 Mt (up 79%, MPOB) and Indonesia with 2.07 Mt of CPO and kernel oil (GAPKI). India holds about 1.7 Mt of palm oil stocks (USDA) but no strategic reserve. | USDA PSD; MPOB; GAPKI |
| Capacity utilisation | mill utilisation not published; Malaysian oil extraction rate 19.74% (2025) | Supply is capped by fruit, not mills. Malaysian estates averaged 17.77 t FFB/ha in 2025. Indian port refineries are underused because Indonesia exports refined oil: AWL alone has 5.5 Mt a year of refining capacity. | MPOB 2025; AWL Agri Business |
| Geographic and producer concentration | top country Indonesia 59.2%, top-3 (Indonesia, Malaysia, Thailand) 86.7%, HHI 4,077 (2023); exports: Indonesia 48.8%, top-3 84.7% of value | The most concentrated major farm commodity. Wilmar (26.4 Mt tropical oils sold), Golden Agri-Resources, Musim Mas, SD Guthrie and Indonesia's state Agrinas (1.7 Mha of seized plantations) dominate. | FAOSTAT 2023; UN Comtrade 2024; company reports |
| Supply elasticity | short-run very low: about 3 years from planting to first harvest, peak yields from years 7-18, replanting at about 25 years | Output cannot respond to price within a year except through fertiliser use and harvesting effort. Ageing trees, labour shortages in Malaysia and Indonesia's limits on new forest licences hold back long-run growth. | MPOB; GAR FY2025; industry practice |
| Project pipeline and CapEx | little new area; growth from replanting and India's oil palm mission | GAR replanted 16,800 ha in 2025. India's National Mission on Edible Oils - Oil Palm targets 11.20 lakh t of CPO by 2025-26 and 28 lakh t by 2029-30, against 3.80 lakh t in 2024-25. Indonesia's biodiesel mandates absorb more domestic supply. | GAR FY2025; Government of India NMEO-OP |
| Logistics and export flows | about 60% of output is exported: Indonesia 32.3 Mt (70% processed) and Malaysia 15.3 Mt in 2025 | Routes: Dumai, Belawan and Port Klang through the Strait of Malacca to India (Kandla, Mundra, Kakinada, Haldia), China, Pakistan and Europe. India was Malaysia's top buyer at 2.66 Mt. Chokepoints: the Strait of Malacca and Indonesian export levies and quotas. | GAPKI; MPOB 2025 |
Material characteristics Agricultural / soft commodity
Crude palm oil is graded on free fatty acids, moisture and impurities, and bleachability. It is semi-solid at room temperature because about half its fatty acids are saturated, which makes it useful for frying, margarine and vanaspati without hydrogenation. Fractionation splits it into liquid olein and solid stearin. Food buyers in Europe now also test for processing contaminants.
| Property | Value / specification | Why it matters | Source |
|---|---|---|---|
| Free fatty acids (FFA) | at most 5% for standard CPO | Higher FFA means more refining loss; low-FFA lots earn premiums | PORAM standard CPO contract |
| Moisture and impurities | at most 0.25% | Water and dirt speed oil breakdown in tanks | PORAM |
| DOBI (deterioration of bleachability index) | about 2.3 or more is typical for good CPO | Low DOBI oil is hard to bleach to a light colour | PORAM / MPOB practice (indicative) |
| Iodine value | 50.0-55.0 g I2/100 g (palm oil); olein higher | Measures unsaturation; sets olein vs stearin use | Codex Standard 210-1999 |
| Fatty acid profile | palmitic acid 39.3-47.5%, oleic 36.0-44.0% | Gives solid fat for baking and frying | Codex Standard 210-1999 |
| Slip melting point | about 33-39 C for palm oil | Sets use in margarine, shortening and vanaspati | Codex Standard 210-1999 (indicative) |
| Contaminants (3-MCPD and glycidyl esters) | EU maximum levels apply to refined oils | Exporters must refine gently to sell into Europe | EU Regulation 2023/915 (indicative) |
