| Use | Share | Annual volume | Why this commodity | Alternatives |
|---|---|---|---|---|
| Fresh cuts for home cooking and food service (loins, shoulders, ribs, mince) | n/a | n/a basis | Pork is the main meat in China, Vietnam and much of Europe. Pigs convert grain to meat at about 3 lb of feed per lb of gain, much better than cattle, so pork is cheaper per kilo than beef. China alone produced 45.5% of world output in 2024 and eats almost all of it. FAOSTAT 2024; Morgan (1979) for feed conversion | Chicken Beef Fish Plant-based meat |
| Processed and cured meats (ham, bacon, sausages, packaged meats) | n/a | n/a basis | Hams and bellies keep well once cured or smoked, and branded packaged meats earn higher and steadier margins than fresh pork. That is why large packers push into bacon, ham and sausages and sell them through supermarkets such as Walmart (about 15% of Smithfield sales). Smithfield Foods Form 10-K, fiscal 2025 | Poultry-based processed meats (turkey ham, chicken sausage) Plant-based sausages |
| Frozen and chilled pork for export | 8.7% | about 10.5 Mt a yearbasis | Low-cost producers in the US, EU, Brazil and Canada ship frozen cuts and offal to importers with limited land or disease problems. Japan, Mexico, China, South Korea and the Philippines are the main buyers. Trade lets each market buy the cuts it values most. USDA PSD (Oct 2026); UN Comtrade HS 0203, 2024 | Domestic production Imported chicken |
| Lard and pig fat | n/a | about 11.4 Mt of pig fatbasis | Fat is a co-product of every carcass. It is rendered into lard for cooking and baking, and into fats for animal feed, soap and biodiesel. Its sale lowers the net cost of each pig. FAOSTAT 2024 | Vegetable oils (palm, soybean) Beef tallow Butter |
| Offal and pharmaceutical by-products (heparin, gelatin) | n/a | about 8.2 Mt of edible pig offalbasis | Offal such as feet, ears and organs is prized in China and other Asian markets, so Western packers export it. Pig intestines are the main raw material for the blood thinner heparin, and skins and bones yield gelatin. FAOSTAT 2024 | Bovine offal and gelatin Synthetic anticoagulants |
From field to user
- Breeding herd Sows farrow piglets in breeding units. China's breeding sow inventory was 39.61 million at end-2025 (Muyuan 2025 annual report, citing national data).
- Nursery Weaned piglets are raised in nurseries for several weeks before moving to finishing barns.
- Finishing Pigs are fed maize and soybean meal and go to market at about 230 lb, around six months of age (Geman 2005).
- Slaughter About 1.49 billion pigs were slaughtered worldwide in 2024 at an average carcass of 84 kg; US carcasses averaged 97 kg and Indian 40 kg (FAOSTAT).
- Cutting and processing Carcasses are broken into loins, hams, shoulders and bellies; bellies become bacon and hams are cured. Smithfield's eight US plants can process about 108,000 hogs a day (10-K, fiscal 2025).
- Cold chain and trade Fresh and frozen pork moves by refrigerated truck and container; world exports of HS 0203 pork were worth $36.3 billion in 2024 (UN Comtrade).
- Retail and food service Supermarkets, wet markets, butchers and restaurants sell fresh and processed pork; fat and offal go to separate buyers.
